    Created by TU Dublin and Airfield Estate, Botanical Cuisine is a culinary degree programme unique in Europe, which facilitates an experiential ‘hands-on’ learning environment for Chefs. It provides them with the knowledge, skills and competencies necessary to grow their own food produce, and it will enable them to creatively and confidently innovate plant-based food production and service in line with current food and sustainability trends.

    Here, on the estate, Chefs work alongside our garden, farm and apiary teams to learn about and experience sustainable food production. Their allotment in the community garden is where they hone their skills, growing their own food for their end-of-year exam.
